The ...I wouldn't recommend pie dough for empanadas. The empanadas I've had here in Mexico use a dough that is slightly more bread-like and definitely less fragile. A good pie crust is crumbly, best eaten with a fork, and not with your hands like empanadas. Good luck with the Thanksgiving pie.
